The menu has been confirmed for the 2016 Building Better Healthcare Awards ceremony at The Brewery in central London on 2 November.

The menu will start with a dish of venison carpaccio as a non-veg option

The vegetarian starter option is Cauliflower, halloumi, roasted potatoes, dried grapes with a pernod dressing

This year’s four-course meal begins with venison carpaccio, served with black pudding beignets, pickled vegetables, quail’s egg, chestnut cream, and lemon olive oil. For vegetarians, there is yeasted cauliflower served with halloumi, roasted new potatoes, cauliflower crisps, and dried grapes and drizzled with a pernod dressing.

The vegetarian main course option is Malaysian red pepper tofu

For main course, meat-eaters will enjoy chicken ballotine with a crispy chicken lollipop, crushed potatoes, winter root vegetables, bagna cauda, spinach, shitake mushrooms and a sumiso dressing. Alternatively, there is a meat-free dish of Malaysian red pepper tofu with baby pak choi, sugar snap peas, cashew nuts, and BBQ sticky rice cylinders.

All diners will end with a dessert of lemongrass panna cotta with grapefruit milk, orange blossom, lemon balm, and shortbread crumbs.

There will then be petit fours and tea and coffee, prior to the awards ceremony beginning.

Guests will drink a choice of French Gaillac Rouge red wine and Roaring Meg Pinot Gris white wine from New Zealand.

The judges are currently examining more than 150 entries to this year’s competition before choosing their winners.

Following on from the success of the 2015 awards, the results will be announced at the awards ceremony itself.

The judges can award more than one winner or highly commended entry in a category where more than one project is worthy of special merit. In the event there are two winners in a category the judges reserve the right not to award a highly commended prize. The judges also reserve the right to only award a winner or highly commended in a category where they feel there are not enough entries worthy of special merit.
